Recipes for Freezer Meal Success!


I think it’s no secret by now that I LOVE freezer cooking. There’s just something so satisfying about opening my freezer and seeing it stuffed full of home-cooked meals ready to be eaten whenever I need them. And I certainly love being able to pull a meal out after a long hard day. It saves our budget and makes me feel like I’m still an awesome mom;).

This past week, a local grocery store had a killer deal on chicken breasts. As in- I don’t think I’ve seen prices that low since I was first married 5 years ago. My husband and I bought two 40 pound boxes of chicken to take advantage of this sweet deal;). We vacuum sealed about ¾ of it (My hands and shoulders were SO sore after that since I was the one cutting all the fat off the chicken haha ;) ). With the rest of the chicken, I threw together some freezer meals- because that’s what I do ;).

One of the easiest ways to put together freezer meals is “dump” meals. Meaning, you literally dump everything in a Ziploc bag and freeze it- no pre-cooking r required :). Here are just a few ideas:

*Two cans of cream of chicken soup, a packet of Ranch seasoning, and 2-3 chicken breasts = Creamy Ranch Chicken

*2-3 chicken breasts, 2 cans of cream of chicken soup, 8 oz of cream cheese and an Italian seasoning packet= Creamy Italian Chicken

*2-3 chicken breasts, 1 can of black beans, ¼ bunch of chopped cilantro, 2 Tbsp of lime juice, 1 minced garlic clove, 1 can of chicken broth and shredded cheese= Cilantro Black Bean Chicken

*3 cans of cream of chicken soup, 2-3 chicken breasts, and a bag of frozen vegetables (then when you are cooking it in the crock pot, add refrigerated biscuit dough an hour before it’s done) = Chicken and Dumplings

*3 cans of chicken broth, 1 can of corn, 2 cans of chilies, 1 tsp of chili powder, 1 packet of ranch seasoning, 2 chicken breasts, 1 diced onion and 3 cans of white beans = White Chicken Chili

Depending on the meal, you can serve it with rice, noodles, mashed potatoes, or by itself it it’s sufficient;). All of these require 8 hours on low or 4 hours on high. Is this easy or what?? Double each recipe (since you’re already doing the work!) and you get twice the amount of meals! And this is only a handful of the recipes you could try!

In addition to a few dump meals, I also cooked two crock pots full of chicken, and used those for enchiladas. I made twenty Honey Lime Chicken Enchildadas (which is two big meals including leftovers!!). I believe I have shared that recipe before, but in case you missed it, here it is again, because this is definitely a recipe you need;).

And then I made about 40 red sauce enchiladas. All I do is mix the chicken with a couple cans of drained black beans, shredded cheese, and a couple cans of red enchilada sauce, roll it in some tortillas and chuck it in the freezer. Then I can pull out several and put them in a pan with cheese for a quick weeknight meal, or I can pull out one at a time and heat it in the microwave for an easy, protein-packed lunch.

I also made about 50 breakfast burritos, 120 bran muffins, and 4 frozen pizzas. (All of which I will share in future articles;) ). When it was all said and done, this was the final product:

If you haven’t given freezer meals a chance, start with just one meal, make twice as much as you normally would, and freeze half of it. Once you get a chance to take advantage of a home-cooked freezer meal, it’s hard to not want to make several more!
