This week we will make a pot of Chili Verde Chicken and use it in three different recipes – making this week a fast, easy, economical week of cooking. Don’t like chicken? Use a large pork or pot roast instead of the chicken. Shred the meat and substitute it in all of the recipes. Either way, chicken, pork, or beef, you will love cooking this week.

Double the Mayonnaise Biscuit recipe. Store the extra in an airtight bag. On day 4, wrap the biscuits in aluminum foil and heat in a preheated 350 degree oven for 10-15 minutes, while preparing the gravy.
