Since you have your package of quinoa out today, measure out 1 cup of dry quinoa and store in a zip-loc bag so it is ready to use in Day 5 Casserole.

When cutting up the chicken, cut 1 extra pound into thin strips and store for Day 5 Casserole.

Sort and rinse 1 ½ pounds of dried pinto beans. Place in a large, heavy bottomed pot and cover with water. Set aside to soak overnight. These are the Charro beans you will use on Day 3.

Use the poultry seasoning you made on Day 4 in today’s Casserole. Pull out your already measured quinoa and already cut up chicken to make prep time faster.
