Cheddar Bacon Mashed Potatoes

Serves 6


5 potatoes
1/4 cup milk
1 cup sour cream
1 cup shredded Cheddar cheese
5 slices bacon, cooked and crumbled
1 teaspoon salt
1/8 teaspoon pepper

Scrub and quarter potatoes. Place in large saucepan filled with 2 inches of water. Bring to a boil on high heat. Reduce heat and cover. Cook for 20 minutes or until tender when pierced with a fork. Drain and mash. Add milk and mash until creamy. Stir in sour cream. Add cheese, bacon, salt and pepper. Place in lightly greased casserole dish. Sprinkle paprika on top. Bake at 400°F, uncovered, for 15 minutes.
