Classic Bratwurst With The Works

Serves 10

Ingredients:

10 fresh bratwurst

FOR THE SAUERKRAUT:
1 teaspoon vegetable oil
1 medium yellow onion, thinly sliced
2 slices bacon, cut into 1-inch pieces
1 unpeeled Granny Smith apple, cored and cut into 1/2-inch cubes
1 pound fresh sauerkraut, rinsed and fully drained
1 1/2 teaspoons caraway seeds
1/2 cup beer
kosher salt
freshly ground black pepper
prepared mustard
10 hot dog buns or rolls

Grill the bratwurst over Direct Medium heat until browned, 6 to 8 minutes, turning once halfway through grilling time.

TO MAKE THE SAUERKRAUT: In a large sauté pan over medium heat, warm the oil. Add the onion and bacon and cook for 5 minutes, stirring occasionally. Add the apple, sauerkraut, and caraway seeds and cook for 5 minutes more. Add the beer and grilled bratwurst. Cover and cook over low heat for 25 minutes. Stir and season with salt and pepper.

Spread a generous amount of the mustard on the inside of the buns or rolls. Add the bratwurst and top with the sauerkraut. Serve immediately.
