1 29-ounce can yams in syrup
2 tablespoons butter or margarine
1/3 cup brown sugar packed
3 tablespoons orange juice concentrate
2 tablespoons peanuts halved or coarsely chopped cashews
Place yams with syrup in a medium saucepan; cover. Over medium-high heat, bring to a boil and boil for 5 minutes or until heated through, stirring occasionally.
Meanwhile, in a 10-inch non-stick skillet, melt butter. Stir in brown sugar and orange juice. Bring to a full boil and boil for 3 to 5 minutes or until a caramel brown color and mixture coats a metal spoon, stirring occasionally.
Drain yams well; cut if large. Place yams in skillet; stir to coat. Bring to a boil and boil for 2 minutes or until heated through, spooning sauce over yams occasionally.
Spoon into a serving dish. Sprinkle with nuts and serve.
Serve with sliced cooked ham or turkey and a green salad.
