Leftover Meat Or Poultry Sandwiches

Serves: 6

   2 cups beef cooked, chicken, or turkey
   3 tablespoons parmesan cheese grated
   1/2 cup mayonnaise real or enough to moisten
   1 teaspoon mustard prepared or to taste
   1/2 teaspoon cream style horseradish or to taste
   Salt to taste
   Thinly-sliced pumpernickel or rye bread
   Margarine
   Crisp lettuce leaves


Coarsely grind or mince leftover meat; add Parmesan cheese. Stir in mayonnaise to blend; add mustard, horseradish, and salt to taste. Spread on bread prepared with margarine and lettuce.

Note: Serve with vegetable soup for a complete meal. For variations in taste: To beef, add finely chopped sweet pickle, green onion, or hard-cooked egg. To chicken or turkey, add chopped celery, cucumber, chutney, or nuts.
