A quick and easy muffin recipe infused with coffee. These coffee muffins are the perfect breakfast or dessert treat.
|2 1/4 cups||all purpose flour|
|1 tablespoon||baking powder|
|1/2 cup||butter, melted|
|2 tablespoons||instant coffee granules|
|1 teaspoon||vanilla extract|
Preheat your oven to 400° F.
In a large bowl sift together the flour, sugar, baking powder, cinnamon, and salt; set aside.
In a medium bowl combine milk and instant coffee. Mix until the coffee is dissolved.
Mix in the eggs, melted butter, and vanilla.
Add the liquid ingredients to the large bowl of dry ingredients. Mix until all the flour is moistened. You don't want to over mix. Lumps are okay.
Fill greased or lined muffin cups 2/3 of the way full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
