Gluten Free Flour Featherlight Mix

This is a great substitute for all-purpose flour.

1 cup rice flour
1 cup cornstarch
1 cup tapioca starch flour
1 tablespoon potato flour, (NOT potato starch flour)
2 teaspoons xanthum gum


Mix together and use in place of all-purpose flour.

To make baking easier, mix up a big batch of this mix and store in a closed container at room temperature. Then you don't have to mix it up every time you want to bake.
