Pork and Black Bean Quesadillas

Here is a delicious way to use up leftover pork.

Dovetailing tip: Use the 1/2 cup of leftover Pork Tenderloin from Meal 2.

Ingredients:

1 (16-ounce) can black beans, rinsed and drained
1/2 cup leftover pork, diced or shredded
1 (4-ounce) can chopped mild green chili, drained
4 low-fat flour tortillas (8 inches)
1 (8-ounce) package Cheddar cheese
1/2 cup salsa
1 teaspoon dried oregano

Directions:

1. POUR the beans into a bowl and mash. Stir in the pork, chiles, salsa, and oregano. Put a tortilla in a dry skillet over medium heat. Top with ¼ of the cheese. Spread on half of the bean mixture. Top with another ¼ of the cheese and another tortilla.
2. SQUASH the sandwich, then cook for 3 minutes per side, or until golden. Cut into 4 wedges. Repeat with the remaining ingredients.
