Delicious Soup and A Winner!

January can be rough sometimes. It’s cold, dark, and everyone’s having a rough time getting back into the swing of things after enjoying the holidays. It also feels like winter is NEVER going to end…. So the best way to combat this is by embracing January for what it is and taking comfort in some delicious soups, am I right?? ;)

I LOVE a good bowl of soup in the wintertime. There’s just something so comforting and warm and cozy about it. Especially when it’s a creamy, extra TASTY bowl of soup! Cue: Fresh Cauliflower Soup. Now, some people (aka my husband) may not be interested in hearing more about this soup after hearing the word cauliflower, but I guarantee even your pickiest of eaters will eat this. My husband AND my kids ate this soup with no complaints, which is a pretty big deal at my house! My husband even went for seconds- win!!

This soup is the perfect comfort food, and it seriously just tastes so good! It’s thick and creamy and cheesy- seriously, you need to make it ;). It’s also fairly simple to make! Just chop an onion, and put it in a pot with a chopped head of cauliflower, chicken broth, and thyme. Once that’s cooked you pull out a few pieces of cauliflower and blend up the rest (my Blendtec did this wonderfully!). Then you’ll heat up your cream base and once that’s done you just combine the two and voila! Beautiful, delicious, creamy cauliflower soup! If you’re feeling wild, you can top your soup with extra cheese, bacon, or croutons, but honestly, this soup doesn’t need the extra fluff. It’s perfect the way it is :).

One side note- in the recipe it calls for fontina cheese, but don’t stress if you don’t have it around! I’ve used a few different cheeses and the soup always turns out wonderfully! This is a recipe that is definitely very forgiving- I’ve added extra cauliflower and chicken broth when I needed to use it up some leftovers and it’s always been delicious!
