Salmon Cakes Salad

I make my own Salmon Cakes. They are very easy and you control what goes in them. Romaine and spinach topped with oranges, avocados, and peas. The ginger dressing pulls it all together.

Ingredients:

4 frozen salmon cakes
1 romaine heart, chopped
2 cups baby spinach leaves
1 navel orange, peeled and chopped
1/2 small red onion, thinly sliced
1 ripe avocado, diced
1/2 cup peas
salt and pepper
1/2 cup litehouse sesame ginger dressing

Directions:

Heat a medium skillet over medium high heat. Add patties and cook about 3 minutes on each side until golden brown and cooked through. Combine greens, chopped orange, peas, avocado, and red onion in a salad bowl. Add in Litehouse Sesame Ginger Dressing and toss salad. Season the salad with salt and pepper, divide among 4 plates. Top salads with warm salmon cakes.
