Chocolate Ganache Glaze

This is a wonderful frosting; chocolatey, creamy, almost fudge-like. Store the cake in the refrigerator and makes this frosting even better.

Yield: Makes about 3/4 cup

6 ounces semisweet chocolate chips
3/4 cup heavy cream
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt


1. Place the chocolate in a medium bowl.
2. Heat the cream in a saucepan to just before a boil. (Don't boil, though.)
3. Add the salt.
4. Pour over chocolate in bowl. Stir until chocolate is melted and smooth.
5. Cool for 5 minutes and use as a glaze. (You want to glaze your cake while the frosting is warm).
6. Refrigerate until set.
