Mother’s Day Brunch—Indulge and Don’t Feel Bad About It!

In two days we'll be celebrating Moms (and selfless caregivers the world over, actually). A recent poll showed that the most popular way to honor those special people in our lives is with brunch.


Why brunch? There are so many reasons. Start with the fact that it's the time and place for the ultimate mashup. A mashup is simply combining two foods to create a third, hybridized variety. Think of waffle tacos and cronuts-the croissant and doughnut combined-(and all the cronut knockoffs) popping up at a fairly constant rate.


Or the glazed donut breakfast sandwich. Sweet paired with savory never tasted so good.


But if you want to stick with a purely savory mashup that makes a wonderful brunch entrée, here's my favorite. This idea was recently showcased in Martha Stewart's Living, but it's actually been around a long time. It's the bacon 'n egg and toast cup. One of the reasons this dish makes a perfect brunch idea is its simplicity, which means even your kiddies or grandkiddies can handle it.

Butter a muffin tin well; set aside. Lightly toast your favorite bread; while the bread is still warm from the toaster, gently press each slice into your buttered muffin cups, forming it to the shape of the cup. Then, depending on how many egg cups you intend to make, fry up as many slices of bacon (careful not to over-cook) and drain on a paper towel. While your bacon strips are still warm, lay a strip into each muffin cup, pressing it down.

Next, crack an egg into each bread- and bacon-lined cup. This gives you "eggs sunnyside up." If you don't care for that, beat your eggs and pour them into your cups for a baked scrambled egg version. Top each cup with a dash of salt and pepper and bake for approximately 10 minutes, or until eggs are set.


Or how about a new twist on an old theme? Pizza is tried and true, so how about a breakfast pizza. This is another very easy dish that's limited only to your imagination. We use naan bread that we cut in triangles. First we sprinkle shredded cheeses over each piece, then add cooked bacon (in slices or crumbles). From there we toss on diced veggies such as green onions, bell peppers, chives, and even fresh tomatoes. We top it all with an egg-and like the egg in a muffin cup mentioned above, you can go sunnyside up or do the scrambled approach. We bake these for approximately 8 to 10 minutes, just until the eggs are set.

And the nice thing about breakfast pizza and the egg in a muffin cup, the bacon can be cooked ahead and stored in the fridge until you're ready to assemble your dish.


But back to why brunch is such a wonderful way to celebrate Mothers Day: Besides being the perfect arena for serving mashups, it's also well-suited to classical breakfast foods dressed up. Consider pancakes topped with exotic syrups (mango-peach) or peanut butter and chocolate sauce (not kidding-it's divine). Or stick to traditional pure maple syrup but go exotic with flavored butters (strawberry, raspberry, peach, cinnamon, maple…the list goes on).

And here's the best reason why brunch is the most popular way to celebrate a special occasion: Because brunch is understood from the beginning to be a "special" meal, there's an unspoken sense that you don't have to feel bad about indulging in whatever is being served. Go ahead, enjoy cronuts with whipped cream, or warm glazed doughnuts with bacon and eggs, or pancakes slathered in peanut butter and chocolate sauce! It's brunch for crying out loud! Happy Mothers Day-there's no one that deserves brunch more.
