The Chex Mix You HAVE to Try

Chex mix is a huge craze right now. I’m pretty sure that every time I get on Pinterest I see at least one variation of this crunchy, delectable treat. Every time I see a new adaptation, I can’t help but want to try it! My husband doesn’t understand it. He doesn’t get why Chex mix is such a big deal. I just have to shake my head and tell him he is missing out big time.

Why is Chex Mix so big right now? Well obviously, it’s very tasty- but I think an even bigger reason is the fact that you can combine a delicious crunchy texture with a huge number of flavors and variations to suit whatever your particular craving is at the moment. I have seen versions of Chex Mix (also known as Muddy Buddies or Puppy Chow) that include Nutella, Lucky Charms, Oreos, Butterfingers, Thin Mints, Marshmallow Crème, Cake Batter, Confetti Cake Mix, Snickers, Candy Canes and a whole host of other delicious concoctions! My waistline and budget have not given me the opportunity to try all the variations I want to yet- but slowly and surely I will get there someday.



But a few months ago I ran into a delectable deviation from the original, and I knew I had to try this one out sooner than later. The actual name of this recipe is Better Than S-x Chex Mix (after the cake of the same name), but I think that title can make some people a little uncomfortable, so you could call it the Best Chex or Better than Anything Chex Mix- or really whatever this tasty goodness inspires you to call it. Or call it by the original name if it doesn’t bug you ;).

Anyway, this Chex Mix version seriously has it all. You start by making a yummy brown sugar and butter mixture and pour it over Chocolate Chex. That’s definitely a good place to start and I would probably be happy just munching on that - but it gets better!

As if this wasn’t enough goodness packed onto a pan, we now add all the toppings. Melt milk chocolate and white chocolate chips and drizzle it all over. Nothing is bad with chocolate- and now that we’re adding two kinds, you know it’s gotta be good!

But we’re still not done! Now we melt caramel bits (or I just cut up regular caramels into smaller pieces) and drizzle that heavenly goodness all over. I. Love. Caramel. That’s all I need to say.

And as the metaphorical cherry on top, we lightly sprinkle some coarse sea salt all over our beautiful chocolaty Chex creation.



This stuff is so good- and it has something to please everyone! The salty and sweet combination, the sweet crunchy factor, peanut butter and chocolate, caramel and chocolate, marshmallow and chocolate (did I mention it has chocolate?!). I also love that you break it up in smaller pieces- so someone who loves peanut butter (a.k.a my husband) can eat all those gooey delicious pieces, and someone who is not such a big fan of peanut butter but a very big fan of chocolate, caramel and pretty much everything else in this recipe (a.k.a. me) can enjoy this treat together.

Better than Anything Chex Mix

Better than Sex Chex Mix

With a caramelly crunch and delicate chocolate drizzle, this snack is perfectly suited to any occasion, from parties to family movie night.


Ingredients:
8 cups chocolate chex® cereal
3/4 cup cup packed brown sugar
6 tablespoons butter or margarine
3 tablespoons light corn syrup
1/4 teaspoon baking soda
1 cup reese's peanut butter cup, mini size
1 cup miniature marshmallow
1/2 cup caramel bits (found by the chocolate chips in the baking aisle -- or chop up regular caramels)
1 tablespoon heavy cream
1/2 cup milk chocolate baking chips (or more if you're a huge chocolate fan)
1/2 cup vanilla (white) chocolate baking chips
1 teaspoon coarse sea salt


Directions:
1. Into large microwavable bowl, measure cereal; set aside. Line cookie sheet with waxed paper or foil.

2. In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on High 1 to 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour caramel mixture over cereal, stirring until evenly coated. Microwave on High 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes. Break into bite-sized pieces.

3. Make sure Chex mixture is cool to the touch (so candy doesn't melt.) Evenly sprinkle mini peanut butter cups candy and miniature marshmallows over Chex mixture.

4. In small microwavable bowl, microwave caramel baking bits and cream uncovered on High about 1 minute or until chips can be stirred smooth. Use a spoon or fork to drizzle over snack. Microwave the milk chocolate baking chips next, starting with 20-seconds and stirring, then at 20 second intervals until the mixture is completely smooth (microwave temps vary, so watch the chocolate and stir frequently until it's of drizzling consistency). Drizzle over the snack mixture. Then microwave the vanilla (white) baking chips in 20-second intervals, stirring until smooth, and drizzle that over the snack mixture. (Note: The vanilla and milk chocolate chips should not need cream added.) Quickly sprinkle coarse salt over all while candy drizzles are still wet.

5. Refrigerate until set. Break apart and store in tightly covered container.

DESSERT IDEA: Create parfait desserts by layering Chex mix and lightly sweetened whipped cream!
