A Good For You FAST Breakfast

As I have typed this recipe, one thought keeps crossing my mind. That is: "Man! I wish I would have made some of these!" I have been so short on time lately (probably many of you are), these would have been perfect! They are so on-the-go, but you actually get some nutrition with it! Time-wise, I ate out this morning but definitely didn't get nutrients that the bars below can provide. I'm full but wanting.

Fast and Healthy usually don't fit in the same sentence. Here, they do! Yay!


Nutritious Breakfast Bars



Serving size: 16
Calories per serving: 322

Ingredients:
1/2 cup softened butter
1 1/4 cups packed brown sugar
2 eggs
1/3 cup molasses
1 3/4 cups flour (try whole wheat or multi-grain)
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
2 cups oatmeal
3/4 cup chopped nuts
1 cup chocolate chips and/or coconut
1 cup raisins, dried cranberries, dates, chopped apricots, etc


Directions:
Cream butter, sugar, eggs, and molasses. Mix dry ingredients and add to sugar mixture. Fold in oatmeal, nuts, and dried fruits, Mix well and press into a grease 9 X 13 pan. Bake at 400 degrees for 12 - 15 minutes Makes 16-24 bars that can be eaten on the go if necessary.
