Yet Another Way to Use Rhodes Rolls

How did we live before frozen dinner rolls? They are just so good, and all you have to do is open the bag. The best thing is that you can make countless things with them! From scones to breakfast cakes (see butterscotch bubble loaf in Overnight Breakfasts from Nov. 23rd Weekly Newsletter), you have meals on the ready.

So, here's yet another gem, only this one is reserved for lunch or dinner (no one's stopping ya from eating it for breakfast, but it just doesn't cut it for me that early!). I love it because it's bursting with flavor, and you just throw it together. No need to measure, no need to cook, just throw it on and bake.

I made this yesterday. Two words: YUM...MY! Okay, one word, but it just has to be said like that. It was so good for all of the effort I didn't have to put into it. If you use canned sliced olives and mushrooms, it's even faster.

Barbequed Rolls

Ingredients:
package frozen white dinner roll (or refrigerated biscuits, but I prefer rolls)
barbecue sauce (a honey bbq gives it a good, sweet taste)
red or green peppers , diced
olives, sliced
cheese (any kind is good; I did cheddar and Parmesan, but provolone would be divine)


Directions:
Thaw rolls according to package directions (I used about 15 to 20 rolls). You can choose to cut them if so desired. Place rolls in a GREASED 9 X 13 pan. Let rise. Top with bbq sauce, amount is up to you, I used about 1/3 cup. Top with peppers, olives, and mushrooms. Sprinkle with cheese. Cover and bake at 350 degrees for 15 minutes, continue to bake uncovered 15 to 20 minutes, until rolls are done.
