I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Hot Potato Salad

Serves: 8

6 potatoes
1/2 cup white vinegar
2 teaspoons salt
1/4 teaspoon black pepper
3/4 pound bacon cut into 1/2-inch pieces
6 eggs
3/4 cup green onions, sliced
4 cups salad greens
8 hot dogs or frankfurters

Cook potatoes in boiling water; peel and dice. Add vinegar and seasonings. Fry bacon until crisp. Drop eggs into boiling water and cook just 4 minutes; remove and cool slightly; peel and slice. Combine potatoes, bacon, 1 tablespoon bacon fat, onion, and soft-cooked eggs. Mix well, sprinkle with bacon and serve on salad greens with big frankfurters.
