Crockpot Lasagna Soup

2 teaspoons olive oil
1 pound mild Italian sausage
1 onion chopped
1 green bell pepper chopped
3 cloves garlic minced
1 (32-ounce) container chicken broth
1 (15-ounce) can Italian stewed tomatoes, blended
1 (15-ounce) can tomato sauce
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1 teaspoon basil
4 ounces whole wheat lasagna noodles, broken into small pieces
1 cup shredded mozzarella cheese


Heat the olive oil over medium heat in a large nonstick skillet. Add the Italian sausage, onion, green pepper, and garlic. Cook until the meat is browned and crumbled. Set aside.

Put the chicken broth, Italian stewed tomatoes, tomato sauce and spices in the crockpot and stir. Add the broken noodles and sausage mixture to the crockpot.

Cook on low for 3-4 hours until noodles are tender.

Serve each bowl with sprinkled mozzarella cheese on top.
