Warm Spinach Salad


Serves: 4

Ingredients

3 cups baby spinach leaves
2 shallots finely minced
DRESSING
4 strips bacon
1/4 cup olive oil
2 tablespoons balsamic vinegar
2 tablespoons honey

Directions:

1. Cook the bacon until brown and crisp, then drain and let cool on paper towels.
2. Mince the shallots.
3. Crumble the bacon with your hands and place in a small bowl along with the olive oil, vinegar, and honey. Whisk until well blended.
4. Place the spinach in a salad bowl and sprinkle with the shallots. Heat the dressing in a microwave or a saucepan until very warm but not hot. Pour the warm dressing over the spinach, which will cause it to wilt slightly. Toss and serve immediately.
