Ingredients

4 to 6 pounds whole chicken
1 tablespoon garlic salt
2 teaspoons dried thyme
1 teaspoon black pepper

Directions:

1. Remove the giblet packet.
2. Sprinkle the garlic salt, thyme, and pepper over the chicken. With your hands, rub the spices over the entire chicken, front and back.
3. Put the chicken in a baking pan breast side down. Place in a preheated 350°F oven, and cook according to the roasting chart at left. During the last 15 minutes, turn the chicken over, insert the meat thermometer into the inner thigh, and continue roasting according to the chart.
4. Let the bird sit about 5 minutes before cutting and serving.

Chicken Roasting Chart
At 350°F:
2 1/2 – 3 pounds - 1 1/4 – 1 1/2 hours
3 – 4 pounds - 1 1/2 – 1 3/4 hours
4 – 6 pounds - 1 3/4 – 2 1/4 hours

Poultry is cooked when its internal temperature reaches 180°F. When the thermometer reads 170°F to 175°F, you can remove the bird from the oven. It will continue to cook as it “rests” for a few minutes.
