Chicken Paprikash

Ingredients

1 red bell pepper chopped
1 medium onion chopped
1 (14.5-ounce) can chicken broth
1 pound boneless skinless chicken breast or thighs
3 tablespoons paprika
2 tablespoons minced garlic
1 teaspoon salt
1 teaspoon black pepper
8 ounces sour cream

Directions:

1. Chop the pepper.
2. Chop the onion.
3. Place the broth in a large pot over medium-low heat. Add all of the ingredients except the sour cream and stir. Simmer for at least 1 hour, occasionally stirring and flipping the chicken until the broth is reduced by half. Stir the sour cream in the pot right before serving.
