Denali: Denali Salmon Quesadillas with Chipotle Mayonnaise

Ingredients

1 (6-ounce) foil pack salmon Chicken of the Sea, skinless and boneless
4 (10-inch) whole wheat flour tortillas
2 teaspoons olive oil
3/4 cup shredded Cheddar cheese
3/4 cup Monterey Jack cheese
2 cups canned black beans, rinsed
------------------------------
CHIPOTLE MAYONNAISE:
1/4 cup mayonnaise
1/4 cup chopped roasted peppers
chipotle chile in adobo sauce
1 tablespoon barbecue sauce
1 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

AT HOME:
1. Place all mayonnaise ingredients into food processor and blend until smooth.

2. Put into sealable container.

AT CAMP:
1. Place tortilla into pan coated with olive oil.

2. Top with 1/4 of the cheese, beans and salmon.

3. Drizzle with mayonnaise.

4. Cook 2-3 minutes until bottom is brown and cheese is melted.

5. Fold in half; repeat for remaining tortillas.

6. Cut into half and serve warm.
