Tomato, Cucumber, And Onion Salad

Ingredients

FOR THE SALAD:
3 large ripe tomatoes, cored and cut into 1/2-inch slices
1 seedless cucumber, peeled, and cut into 1/8-inch diagonal slices
1 large red onion, cut crosswise into 1/8-inch slices
1/4 cup torn fresh basil leaves
2 tablespoons torn fresh mint leaves
kosher salt
freshly ground black pepper

FOR THE DRESSING:
1/2 cup plain yogurt
2 tablespoons extra-virgin olive oil
1/2 teaspoon minced garlic

whole basil leaves (optional)
black olives (optional)

Directions:

TO MAKE THE SALAD: On a large platter arrange the tomato, cucumber, and onion slices in overlapping concentric circles. Sprinkle with the basil and mint and season with salt and pepper.

TO MAKE THE DRESSING: In a small bowl whisk together the dressing ingredients.

Drizzle the dressing over the salad. Garnish with the basil leaves and a few black olives, if desired. Serve immediately.
