Hippie Burgers

Ingredients

14 ounces extra firm tofu
1 cup toasted whole grain bread crumbs
1/2 cup hemp seeds
1/4 cup chopped scallion
2 cloves garlic
1/4 cup nutritional yeast
1/4 cup tomato paste
2 tablespoons tamari sauce
1 teaspoon dried sage
1 to 2 tablespoon olive oil

Directions:

1. Combine all the ingredients except the olive oil in a large bowl. Using your hands, mash the mixture until it sticks together.* Shape into 8 patties.
2. Heat the oil in a skillet over medium-low heat. Add the patties and cook about 5 minutes on each side until browned.
3. Transfer to a platter and serve immediately.
* Tofu consistency varies between manufacturers. This burger is best with extra-firm tofu; but if the brand you are using is too dry, the burgers may not stick together well. If you have this trouble, try adding one of the following: another 1/4 cup bread crumbs, 1 tablespoon flour, or another tablespoon or so of tomato paste.
