Citrus Grilled Salmon

Ingredients

extra virgin olive oil
4 (6 ounce, 1 inch thick) salmon filets
kosher salt
freshly cracked black pepper
MARINADE
3/4 cup fresh orange juice
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1 clove garlic minced
2 tablespoons orange marmalade
2 tablespoons soy sauce
1 tablespoon light brown sugar
2 tablespoons minced cilantro
1 tablespoon butter
pinch kosher salt
freshly cracked black pepper

Directions:

For salmon marinade: In a medium saucepan, bring all marinade ingredients to a boil over medium heat, stirring constantly to melt the preserves and to keep the mixture from burning. Reduce heat to a simmer and let the marinade reduce until syrupy, about 15 to 20 minutes. Add additional salt and pepper to taste. Pour marinade into a large shallow container; set salmon fillets in marinade and cover. Refrigerate for 1 to 2 hours.

When ready to cook, heat grill to medium-high heat. Brush both sides of salmon fillets with olive oil just before grilling, then season with salt and pepper to taste. Grill salmon for approximately 4 minutes per side, brushing with marinade during the final few minutes of cooking. Transfer salmon to serving plates and garnish with extra cilantro leaves if desired.
