Carrot-Potato Patties

Ingredients

1 1/2 medium carrots, shredded (1 cup)
1 1/2 medium potatoes, peeled and shredded (1 cup)
2 tablespoons grated onions
1/2 teaspoon salt
1/4 cup fat-free cholesterol-free egg product or 1 egg
1/4 cup unsweetened applesauce

Directions:

1. Mix all ingredients, except applesauce, in medium bowl.
2. Spray nonstick griddle or 10-inch skillet with cooking spray. Heat griddle over medium heat or to 375°.
3. For each patty, spoon approximately 1/2 cup batter onto hot griddle. Cook 2 to 3 minutes on each side or until golden brown. Top warm patties with applesauce.
