Pumpkin Chocolate Chip Cookies

Ingredients

1/2 cup unsweetened applesauce
1 cup agave
1 egg
2 teaspoons vanilla extract
1 (16-ounce) can pureed pumpkin
2 1/2 cups whole wheat flour
2 1/2 cups oat flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 1/2 cups chopped walnuts
1 to 1 1/2 cup grain sweetened milk chocolate chips

Directions:

In a big bowl combine applesauce, agave, egg, vanilla, and pumpkin. Mix until well blended then add the remaining dry ingredients. This makes a pretty sticky dough, but you should be able to shape your cookies into balls or drop them off a cookie scoop easily. If not, you may need to add a bit more flour or oat flour. This recipe makes almost 4 dozen small cookies. Bake at 350 for 11-13 minutes. These cookies can be a bit tricky. If you take them out of the oven too soon they will end up being gooey on the inside. However if you bake them too long they will be dry. They are done when the cookies are still soft to the touch but not “mushy”.
