Bowl O'Cherries Stuffing

Ingredients

2 tablespoons butter or margarine
3/4 cup chopped celery
1/2 cup chopped onion
1 teaspoon dried thyme
1/4 teaspoon poultry seasoning
3 cups seasoned stuffing mix
3/4 cup chicken broth
2 cups frozen pitted red cherries thawed and drained, or 2 cups canned pitted cherries, drained

Directions:

1. Preheat the oven to 350°F. Liberally grease a 2-quart casserole dish and set aside.

2. Place the butter or margarine in a medium-sized saucepan, and melt over medium heat. Add the celery and onion and sauté for 5 minutes, or until the vegetables are soft. Stir in the thyme and poultry seasoning.

3. In a large bowl, toss together the stuffing mix, sautéed vegetables, and broth. Gently stir in the cherries.

4. Transfer the stuffing to the prepared dish, cover, and bake for 20 to 30 minutes, or until heated through. If a crisp top is desired, uncover the dish and bake for 10 additional minutes.
