Oat Crackers

Ingredients

1 cup boiling water
2 cups rolled oats
2 tablespoons sesame seeds
1/2 cup oat flour
1/2 cup barley flour
1 tablespoon granulated sweetener
1/2 teaspoon salt
2 tablespoons canola oil
3 tablespoons soy milk

Directions:

Preheat the oven to 375°F.

Pour the water over the oats and sesame seeds, and let stand while you’re mixing the other ingredients.

Add the softened oats to the other ingredients, and mix well. You may want to use your hands for the final mix. Place the dough in the center of a 11 x 17-inch cookie sheet. Press the dough out to the edges, keeping it a uniform thickness all over the pan.

Cut into 48 crackers and bake for 20- 25 minutes, until the crackers begin to brown. They will crisp up after they are cool.
