Barb's Apple Biscuits or Loaf

Ingredients

DRY INGREDIENTS
2 cups unbleached flour
1/2 cup whole wheat flour
3 tablespoons sucanat
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons canola oil
3/4 cup nondairy milk
FILLING
3 cups peeled, chopped apples
2 lemons juiced (3-4 Tbsp)
1/3 cup brown sugar
1/2 teaspoon cinnamon

Directions:

Preheat the oven to 375°F.

In a medium mixing bowl, mix the dry ingredients until well blended.

Add the oil and nondairy milk, and mix until a stiff, workable dough is formed. Do not knead.

Mix the apples, lemon juice, brown sugar, and cinnamon.

To make the loaf, roll the dough out into a 12 x 18-inch rectangle. Place on a cookie sheet, and spoon the apple filling down the center of the rectangle, the long way. Fold one side and then the other up and over the filling, and pinch to seal at the ends and on top. Bake for 20 minutes. Cool and cut into slices.

To make the filled biscuits, break the dough into 12-14 pieces. Roll out each piece into a 5 to 6-inch circle. Scoop ¹?? cup apple filling onto each piece. Draw the dough up over the filling, and pinch together at the top center. Place on a cookie sheet, and bake for 20 minutes.
