Onion and Cheese Pie

Ingredients

1/2 pound Swiss cheese, grated
1/2 Pot Pie Crust recipe
4 eggs, lightly beaten
1 cup milk
1/4 teaspoon ground nutmeg (preferably fresh)
Tabasco Hot Sauce to taste
freshly ground black pepper to taste
1 large onion, sliced
2 tablespoons flour
1 cup heavy cream
1/2 teaspoon curry powder
1 teaspoon salt

Directions:

Roll pie crust 1/8-inch thick and line 10-inch pie plate with it. Flute edges of the crust. Mix cheese thoroughly with flour and spread in bottom of pie shell. Separate onion slices into rings and arrange rings on cheese mixture. Beat eggs lightly. Beat in cream, milk, curry powder, nutmeg, 2 drops Tabasco® sauce (or more if desired), salt, and pepper. Pour egg mixture over cheese and onion rings. Bake in moderate oven (350ºF) for 45 minutes.
