Codfish Cakes

Ingredients

1 pound salt cod filet
6 medium potatoes, boiled
1 large onion
2 eggs, lightly beaten
1/2 teaspoon curry powder
cayenne pepper to taste
1 cup dry bread crumbs
1/2 cup butter
tomato sauce

Directions:

Wash cod in warm running water for 5 minutes. Soak in 4 cups water, overnight, to remove the salt. Drain and discard the water. Put cod, potatoes, and raw onion through a food grinder. Stir in eggs, curry powder, and a few grains of cayenne pepper. Shape into 12 cakes. Dip cakes in crumbs and sauté in butter until brown. Heat tomato sauce and serve with the codfish cakes.

Author’s note: I recommend using Italian dry seasoned bread crumbs.
