Strawberry Spinach Salad with Poppy Seed Dressing

Ingredients

Dressing:
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon poppy seeds
1 tablespoon honey
1 tablespoon orange juice
1 teaspoon grated orange rind
1/4 teaspoon ground ginger

Salad:
10 - 12 ounces fresh spinach
2 small oranges, peeled, sliced
2 cups halved strawberries
1/3 cup sliced, toasted almonds
------------------------------
Variation For Poppy Seed Dressing:
1/2 cup sugar
2 teaspoons sesame seeds
1 tablespoon poppy seeds
1 1/2 teaspoons minced green onions
1/4 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 cup vegetable oil
1/4 cup cider vinegar

Directions:

Dressing:
Thoroughly mix all Dressing ingredients. Chill several hours to blend flavors.

Salad:
Wash and drain spinach and tear it into bite-sized pieces. Arrange in large bowl. Top with orange slices, strawberries, and almonds. Drizzle Dressing over Salad.

Variation For Poppy Seed Dressing:
Thoroughly mix all ingredients. Chill and drizzle over Salad.
