Yield: 1 1/2 cups

Ingredients

2 stalks celery
1 carrot, scrubbed
1/8 head green or red cabbage, cut into chunks
1/4 cucumber, unpeeled and sliced lengthwise
4 leaves kale or collard greens
10 sprigs parsley
1/4 cup coarsely chopped broccoli stalks
1 small red radish, or 1 (1-inch) piece diakon radish (optional)
1 (1/4-inch) piece fresh ginger (optional)
1 1/2 teaspoons freshly squeezed lemon juice (1/4 lemon; optional)

Directions:

Equipment:
cutting board
chef’s knife, 8-inch
measuring cups
juicer
citrus juicer or reamer
measuring spoons
spoon

Juice the celery, carrot, cabbage, cucumber, kale, parsley, broccoli, and optional radish and ginger. Stir in the lemon juice if desired. Alternatively, peel the lemon and put it through the juicer with the vegetables. Serve immediately.

Soothing Aloe Juice: Stir 1 tablespoon of aloe vera juice into the finished juice. Aloe vera provides amino acids and soothes the digestive tract.

Sweet Energizing-Purifying Juice: Add 1/4 unpeeled Granny Smith apple or 1/4 scrubbed beet or both. If using the beet, 2 to 3 leaves of beet greens may be added. People who aren’t used to the taste of vegetable juice often prefer this sweeter variation.
