Ingredients

2 cups chopped Romaine lettuce
2 tomatoes, chopped
1 red, yellow, or orange bell pepper
1/2 cucumber, peeled, seeded, and chopped
2 tablespoons Classic Vinaigrette or Lemon-Herb Dressing (recipes found in Salad Dressings chapter)
1 avocado, chopped

Directions:

chef’s knife, 8-inch
measuring cups
peeler
spoon
measuring spoons
medium bowl
rubber spatula

Put the lettuce, tomatoes, bell pepper, cucumber, and vinaigrette in a medium bowl and toss to combine. Add the avocado and toss gently. Serve immediately.
