V1:Chapter 8: Whole Wheat Bread Made Easy

2 packages yeast, dry
1/2 cup water, warm
3 cups milk, warm
1 cup evaporated milk
3 tablespoons honey
1/2 teaspoon salt
2 eggs, slightly beaten
9-10 cups whole wheat flour



In large mixing bowl, sprinkle yeast over warm water and gently stir until dissolved. Stir in milks, honey, salt and eggs. Add 9 to 10 cups whole wheat flour, stirring with a wooden spoon until it is stiff.

Spoon into 3 oiled bread pans (4-1/2" x 8-1/2"). Let rise to top of pan. Bake at 450 degrees for 10 minutes. Lower temperature to 350 degrees and continue baking for 50 minutes.

Makes 3 loaves.
