V1:Chapter 8: Crock Pot Chili

Ingredients

1 pound ground beef
1 pound sausage, Italian
3 cloves garlic, finely chopped
1 medium green bell peppers
1 medium red bell pepper
2 medium onions, chopped
1/4 cup flour
2 teaspoons oregano
2 teaspoons basil
2 teaspoons cumin
3 tablespoons chili powder
2 quarts (or 8 cups) tomatoes, chopped
2-3 teaspoons hot sauce
1 (20-ounce) can red beans or 4-6 cups soaked red beans
3 tablespoons Worcestershire sauce

Directions:


DIRECTIONS:

Brown together the ground beef and Italian sausage. Drain and set aside. Chop the garlic, red pepper, green pepper and onions finely, then sauté together in the meat pan. Mix together the flour, oregano, basil, cumin and chili powder. Then add the mixture to the pan with meat and cooked vegetables.

Place the cooked ingredients into a crock pot with the chopped tomatoes, hot sauce, beans and Worcestershire sauce.

Cook on LOW 8-12 hours - the longer, the tastier!

* Tip: Pre-cook meat mixture (meat, sausage, vegetables and spices) and freeze up to 6 months
