Chicken Salsa Baked Potatoes

Ingredients

6 to 8 medium russet potatoes
1 (12 1/2-ounce) can chicken breast meat, drained
1 (16-ounce) jar chunky salsa
1 (16-ounce) can refried beans
1 envelope taco seasoning mix
2 cups grated Cheddar cheese

Directions:

Preheat oven to 400 degrees.

Poke potatoes with fork 3 to 4 times. Bake 55–60minutes, or until potatoes are tender.*

In a 2-quart saucepan, combine chicken, salsa, beans, and taco seasoning. Cook over medium heat, stirring constantly until completely heated. Divide over opened hot baked potatoes. Sprinkle cheese over top. Garnish with sour cream and sliced olives. Makes 6–8 servings.
