Angel Hair Pasta with Tomatoes and Basil

Yield: 4 servings (1 1/2 cups each)

Ingredients

8 ounces angel hair pasta
1 teaspoon olive oil
2 cloves garlic, minced
1/2 cup dry white wine
2 tablespoons freshly squeezed lemon juice
2 cups chopped Roma tomatoes
1/2 cup chopped fresh basil, or 2 tablespoons dried basil leaves
1/2 teaspoon (or less) Lite salt
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese

Directions:

Cook pasta in unsalted water according to package directions. Meanwhile, heat olive oil and sauté garlic until golden brown. Add wine and cook 2 minutes. Stir in lemon juice and tomatoes. When pasta is done, drain and put into serving bowl. Add tomato mixture, basil, Lite Salt, and pepper. Toss. Sprinkle with Parmesan cheese just before serving.
