Snowy White Mashed Potatoes

Ingredients

5 lbs. potatoes, peeled, cooked and mashed
1 cup sour cream
1 (8-ounce) package cream cheese, softened
1/4 cup butter, melted
1/4 teaspoon granulated garlic
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon dried parsley
3 tablespoons butter, sliced
1/8 teaspoon paprika

Directions:

In a medium bowl, beat together all ingredients except butter and paprika. Spoon potatoes into a greased 2-quart casserole dish. Dot potatoes with butter. Sprinkle paprika over top. Bake, covered, at 350 degrees for 25 minutes.

Tip: Make crispy potato pancakes with extra mashed potatoes. Stir an egg yolk and some minced onion into 2 cups cold mashed potatoes. Form into patties, dust with a little flour and pan-fry in a little oil until golden.
