The Antipasto Sandwich

Ingredients

1 12-14 inch round loaf of hearty bread
DRESSING
2 tablespoons olive oil
1 teaspoon apple cider vinegar
1/2 teaspoon mustard
salt and cracked pepper to taste
2 scallion minced
SPREAD
2 tablespoons olive oil
1 tablespoon lemon juice
1 clove roasted garlic
1 tablespoon fienly chopped fresh basil
FILLING
2 cups coarsely slivered salad greens
6 thin slices smoked ham
6-8 thin slices dry salami
6 thin slices provolone cheese
4 ripe tomatoes diced
1 cup coarsely chopped black olives

Directions:

1. To prepare the bread, use a serrated knife to cut the loaf in half horizontally. Remove the center of the bread from both halves, leaving a 2-inch shell all around. Set aside.

2. To prepare the dressing, place all of the dressing ingredients except for the scallions in a small bowl, and whisk to combine. Stir in the scallions, and set aside.

3. To prepare the spread, place all of the spread ingredients in a food processor and pulse until the mixture is smooth. Alternatively, place the ingredients in a small bowl and whisk until well combined. Set aside.

4. To assemble the sandwich, cover the inside of each half of the loaf with the spread. Line the bottom half of the bread with half of the salad greens, and drizzle with half of the dressing.

5. Layer the meats, cheese, and tomatoes over the dressed greens, arranging them to fit. Sprinkle with the black olives, drizzle with the remaining dressing, and top with the remaining greens.

6. Fit the top of the loaf over the bottom, and wrap the loaf in aluminum foil. Place the loaf in the refrigerator, topping it with a plate weighed down to compress the ingredients. Chill for at least an hour or overnight, cut into fourths, and serve.
