Tart and Spicy Vinaigrette

Ingredients

1/4 cup fresh lemon juice
2 tablespoons grainy Dijon style mustard
1 teaspoon sugar
1/2 cup olive oil
salt and cracked pepper to taste

Directions:

1. Place the lemon juice, mustard, and sugar in a small bowl, and whisk to combine.

2. Slowly drizzle in the olive oil, whisking constantly until thickened. Taste and adjust the seasonings, adding salt and pepper as needed.

3. Use the dressing immediately or transfer to a jar, pop on the top, and refrigerate. Bring to room temperature and shake thoroughly before serving.
