Easy Bruschetta

Ingredients

1/2 cup olive oil
2 cloves garlic crushed
6 firm, ripe tomatoes such as Roma or plum, cut into small dice
1/2 teaspoon salt
6 leaves fresh basil shredded
1 (10-ounce) package melba toast or 24 slices French bread, toasted

Directions:

1. Place the olive oil and garlic in a large bowl, and stir to combine. Add the diced tomatoes and salt, and stir lightly. Cover and let stand at room temperature for 2 hours to allow the flavors to meld.

2. Stir in the basil and serve immediately, surrounding the bowl with the melba toast or French bread slices.
