Halibut Supreme

Ingredients

2 pounds fresh halibut pieces
1/4 cup plus 1 tablespoon butter, divided
1/4 cup flour
2 cups milk
1/4 teaspoon salt
1/4 teaspoon Worcestershire sauce
3 tablespoons chopped onions
1 cup grated Cheddar cheese
1 buttered bread crumbs (1 cup crumbs plus 2 tablespoons melted butter)

Directions:

Place halibut in salted boiling water. Simmer, covered, about 20 minutes or until flaky. Drain well and set aside.

In a medium saucepan, make white sauce by melting 1/4 cup butter, then stirring in flour until well combined. Add milk, salt, and Worcestershire, stirring constantly over medium heat until the mixture comes to a boil. Continue cooking at a boil for about 2 minutes, until thickened. Remove from heat; set aside.

Sauté onion in 1 tablespoon butter for about 5 minutes, or until tender. Add to white sauce. Layer halibut, cheese, and sauce in greased 2 1/2-quart baking dish, ending with sauce on top. Top with buttered bread crumbs. Bake at 325° for about 30 minutes.
