Sunshine Carrot Raisin Salad

Ingredients

1 (8-ounce) can pineapple tidbit in its own juice, drained
3 (3-ounce) packages (10 ounce bag) shredded carrots (about 5 medium or 45 baby carrots)
DRESSING INGREDIENTS
1/3 cup nonfat plain yogurt
1 tablespoon sugar
3 tablespoons light miracle whip
1/4 teaspoon vanilla extract
3 dashes ground cinnamon
2 dashes ground nutmeg
1/2 cup raisins
OPTIONAL ADDITIONS
2 tablespoons sweetened shredded coconut
1 tablespoon peanut butter

Directions:

1. In a medium-size bowl, mix dressing ingredients together to form the dressing.
2. Mix pineapple into dressing.
3. Buy pre-shredded carrots or use a food processor to shred carrots. Stir into dressing to coat well. Chill salad until ready to serve.
4. For a nice variation, add 1 of the optional additions.

Tastes great with:
Turkey Joes or Broiled Orange Roughy
