Cheesy Potato Skillet with Mixed Vegetables

Ingredients

1 tablespoon olive oil (or canola)
1 (16-ounce) bag frozen mixed vegetables (peas, corn, carrots, green beans, lima beans)
4 cups Ore Ida Country Style Frozen Hash Browns (O Brien includes onions and peppers)
1/2 cup reduced fat shredded mozzarella cheese
10 grinds ground black pepper
2 tablespoons grated Parmesan cheese

Directions:

1. Place oil and veggies in a large nonstick skillet over medium-high heat 4 minutes. Stir frequently.
2. Add hash browns and cook 6 minutes longer, stirring frequently. (Look for fruit to serve like oranges, apples and kiwi.)
3. Sprinkle cheese over vegetables, turn off heat, cover and let stand 1 minute.
4. Serve with orange sections, apple wedges or kiwi slices and nonfat cottage cheese, if desired.
