Ingredients

3 cups frozen hash brown potatoes (Ore Ida Potatoes O’Brien with onions and peppers)
1/2 cup reduced fat shredded Cheddar cheese
2 ounces lean ham or Canadian bacon or low fat smoked sausage
2 whole eggs
4 egg whites
2 tablespoons skim milk
2 tablespoons Dijon style mustard
1/4 teaspoon thyme
20 grinds fresh black pepper

Directions:

1. Preheat oven to 375° Coat baking dishes with cooking spray. (Be sure to coat the sides of the dish too.) Use an 8" x 8" baking dish.
2. Place the frozen potatoes in the bottom of the baking dish. Break up large chunks. Cut the meat into small chunks. Sprinkle the meat and cheese over the potatoes.
3. In a small bowl, whip remaining ingredients (minus pepper) lightly with a fork. Pour evenly over the potato mixture.
4. Top casserole with pepper. Place in oven uncovered and set timer for 40 minutes. No, don’t read the paper; how about using one of those aerobic videos you have? Serve with toasted English muffins and fresh fruit.
