Southwest Chik'n & Vegetable Soup

Ingredients

1 tablespoon olive oil
1 cup chopped onion
1 1/2 teaspoons chopped garlic (3 cloves)
1 (8-ounce) package Morningstar Farms® Meal Starters Chik'n Strip
2 (11-ounce) cans Mexicorn (corn with green and red bell peppers)
2 (14 1/2-ounce) cans chopped tomatoes with green pepper and onion
1 cup chopped green bell pepper
3 cups vegetable broth
1 teaspoon cumin
1/2 to 1 chipotle green chili pepper, chopped
1/4 cup fresh cilantro, chopped
1/2 cup crushed tortilla chips (optional)

Directions:

1. Heat oil in large skillet over medium-high heat. Add onion and garlic. Sauté until onion is translucent, about 2 minutes.

2. Transfer onion and garlic to stock pot, adding MORNINGSTAR FARMS MEAL STARTERS CHIK'N STRIPS, mexi-corn, both cans of tomatoes, green pepper, vegetable broth, cumin and chipotle chili.

3. Heat soup over high heat until it reaches a boil. Reduce heat to simmer. Simmer 10 minutes.

4. Stir in fresh cilantro. Ladle into soup bowls. Garnish with crushed tortilla chips, if desired.
