1 Place the bread in a large serving bowl and sprinkle with the water. Let stand 1 hour. Squeeze out the excess water, and wipe out the bowl. Tear the bread into bits, returning them to the bowl.
2 Add the tomatoes, celery, onion, and basil. Toss well. In a small bowl, whisk together the oil, vinegar, and salt and pepper to taste. Pour the dressing over the salad and toss again. Cover and let stand in a cool place 1 hour.
3 Toss the salad, and taste and adjust the seasoning. Serve immediately.
